Sweet potato Quiche.

Good morning Sunshine’s!!

I hope everyone had a great night, but right at this moment I want to talk to you about this delicious recipe I made last night. Being Cuban I was always deprived of healthy food, as I was stuffed with rice and beans for most of my life. Dont get me wrong, give me some rice and beans with a nice fried steak and I am golden, but we all know that is not the way to eat. Well not for me at least, if my mother reads this she would probably throw a chancleta (sandal) at me.

Any who, I love Quiche and my husband hates eggs, but as crazy as it sounds he will scarf down a Quiche when I make them. So I know how bad pre-made crust is so I decided to  attempt my magic.  When I went to Blue Ridge, GA last week for vacation I picked up half a peck of sweet potatoes.  I knew I could make tons of stuff with it. So here I am, wanting to make a quiche and I have tons of Sweet potato.

BAM. Light bulb. How about a Quiche with a sweet potato crust???

Golden idea. So below please find the recipe and how I made it.  It was super easy and the whole family helped.

Ingredients:
3-5 Sweet potato Depends on the size of your pie dish.
Coconut oil spray
4-5 eggs
Any type of veggies I used, spinach, red and yellow peppers, mushrooms, tomatoes, and onions
½ Cup Cashew milk
1/4 teaspoon freshly ground black pepper
1/2 teaspoon of Himalayan salt
Organic shredded cheese (I didn’t have organic at hand this time and honestly I was too cheap to pay the price)

Now for the fun. The prepping and putting it in the oven.

So while you’re peeling and slicing the sweet potatoes make sure to preheat the oven to 350. Once peeled and sliced thinly spray some coconut oil on your dish and arrange.I tried to put enough sweet potatoes so I wouldn’t see any sides of the dish.

Next get a bowl and throw in all your veggies, cashew milk, eggs, salt, pepper and mix it up.  If you have little ones, this is fun for them to help with.  Just be careful with the egg cracking, as my kid loves to crack and throw it all in there.

Once all is mixed and you’ve taken the eggs shells out of the bowl (hahah) pour it all into your pie dish.

Isn’t it so gorgeous.  The colors are beautiful. Honestly, I thought this would be such a huge fail, but I am so glad it turned out amazing.  Next top it off with some cheese, because in reality cheese is life. Who am I kidding, top that shit off with tons of cheese!!

          Wait, cheese snack break!

Once you’ve had enough fun and everything is set and ready to go throw it in the preheated oven for 45 minutes. During that time clean up, and have some more cheese.

Once you take it out of the oven let it sit for a few minutes.

                                FINAL PRODUCT was SUCCESS and the husband approved.
