Recipe of the week- Skinny Stuffed Sweet Potato

Ahh I have been dying to share this recipe all week!!! I made this last week and it was such a big hit. I still had some sweet potatoes from Georgia so I knew I had more fun recipes to make and this one was super fun and super easy.

Skinny Stuffed Sweet Potato.. say it again… SKINNY STUFFED SWEET POTATO.  Sounds delicious and taste even better.

Sweet potatoes have so many great health benefits and in my mind should be eaten in the afternoon.  They are an excellent source of vitamin A, they are an antioxidant, Anti-Inflammatory, and are known to be a provide potential improvement of blood sugar regulation.

4-5 Sweet Potatoes
¼ Greek Yogurt
4 skinless Chicken Breast ( Or a cooked whole chicken from Sams club or Publix)
Organic shredded cheese
Salt and pepper to taste
Aluminum foil to wrap

This recipe literally doesn’t require much ingredients.


Grab your 4-5 Sweet Potato and puncture them with a knife a few times ( it helps cook them quicker, or you can even put them in the microwave before you wrap them for a few minutes to soften up.)

Once done start wrapping them. You might need some help 🙂 and throw them in the oven for 350 for about 20-25 minutes.. till soft. Test it with a knife.


Grab your chicken while your little helper is wrapping the sweet potato’s and season them with the salt and pepper.  I don’t use salt in our house, but I know a lot of people do. Once seasoned throw them on the grill or in a pan and cook them.


Once they are cooked and cooled down (trust me on this, you don’t want to scream like a little bitch because you burned your fingers.  Been there done that.)


Once cooked and cooled, take them out of the wrapper, squeeze them a little
so they open, and start stuffing.

My little one scarfed it all down and even tried for seconds. This is quick and easy and fun to make.
